We opened in 2020 because downtown didn't have a grocery store — and people deserve to have food where they live.
Why we’re here
Bread & Butter started with a simple idea: downtown Colorado Springs had people living, working, and playing there… And nowhere close to buy groceries. So we built the place we wished was here. A real neighborhood market, right in the middle of it all.
Years in, that hasn’t changed. We’re still a small, locally owned market doing one thing well — being the store the neighborhood can count on. We start with Colorado makers and small producers whenever we can, fill in the rest with the everyday stuff you actually need, and keep the doors open early to late, every day.
Not too much, not too little. Just what you need when you need it.
The two of us
We’re Stacy and Aubrey. The founders, owners, and most days, the ones you’ll see behind the counter.
Stacy Poore
Before Bread & Butter, Stacy spent years in food banking — most recently as COO of Care and Share Food Bank for Southern Colorado. The throughline is the same one that runs through the store: people deserve good food where they live. These days you’ll find her doing a little of everything, from the books to the sausage run down to Pueblo.
Aubrey Day
Aubrey came to the market from public health, where she worked as a healthy environment planner for El Paso County. That background shows up in how the store gets stocked — a real range, room for however you eat, and a wine and spirits selection she keeps a close eye on. She met Stacy through a mutual friend in 2017, and they've been building this place together since.
The folks behind the counter
We hire for one thing first: kindness. The rest we can teach. Our team is here because they want to be. They’ll help you find what you’re after, tell you which salsa they like best, and always be glad you came in.
